Rye whiskey is made predominantly from rye, giving it a drier, spicier and more peppery profile than bourbon. In the United States it must contain at least 51% rye; Canada also has a long tradition of rye whisky. It is the classic whiskey for the Manhattan, Sazerac and Old Fashioned.
